Brazilian Fish Stew

Ingredients


Step #1

  • Roma Tomatoes 20
  • Infused Oil (or good quality olive oil) .5C
  • Salt and Pepper to taste
  • Garlic Puree .25 C

Step #2

  • Olive Oil .5C
  • Garlic Puree .25C
  • Smoked Sweet Paprika .25C
  • Red Pepper Flake 1-2 TBLS
  • Red Bell pepper 3 (de-seeded and chopped)
  • Coconut Milk 3 x 13.5 FL. OZ Cans
  • Lime Juice to taste
  • Cod Loin Cut to 3” Pieces 2.5 #’s
  • Salt and Pepper to taste
  • Cilantro Rough Chop 1 Bunch
  • Scallion Small Bias Cut 1 Bunch

Instructions


Process #1:

  1. Cut tomatoes in 1/2 (long ways)
  2. Toss in Infused olive oil S+P, and garlic
  3. Roast in oven face up for about half an hour or until skins are loose
  4. When cool enough to handle remove skins from tomatoes
  5. Save roasted tomatoes and all pan juices, discard skins
  6. Rough chop tomatoes

Process #2:

In a medium stock pot

  1. Sautee Olive Oil, Garlic Puree, Paprika, Red Pepper Flake
  2. Add a chopped roast tomatoes and coconut milk
  3. Slow simmer until well blended
  4. Add Cod and Simmer till Fish Flakes (about 5 Min.)
  5. Adjust seasonings
  6. Garnish with cilantro (rough chopped) and scallion (small bias to serve)
