INGREDIENTS

• 2 corn tortillas, quartered
• margarine
• diced yellow onion
• diced green onion
• cheese
• 2 eggs
• enchilada sauce or salsa

DIRECTIONS

1. Melt butter in pan
2. Add corn tortilla pieces, cook until crispy
3. Crack eggs over tortillas
4. Add diced yellow onion
5. When eggs are cooked add enchilada sauce or salsa to pan
6. When sauce is heated evenly sprinkle with cheese and diced green onion
7. Transfer to plate
